Barbaras Quick and Easy Flaky
Pastry
9oz Plain
flour,
1 Level teaspoon salt,
8oz Block
of unsalted butter or margarine (straight from the fridge).
1 Dessertspoon lemon juice,
Cold water to mix,
Sieve flour and salt into a mixing bowl,
Coarsely
grate the butter or margarine straight into the flour, dusting it occasionally
with flour to keep the fat shreds separate,
Mix fat
into flour with a knife, and add the lemon juice,
Add the
water slowly, mixing with your hand so that you can feel the consistency of the
dough, it should be smooth but not too stiff, pliable but not too sticky,
Wrap in
greaseproof paper and leave in the fridge for 15 minutes, use as required.
Roll out carefully, ensuring that the pastry is rolled and not squiddged out.
The shredded fat shreds should be visible in the rolled out pastry.
The
pastry will keep for several days in the fridge wrapped in a polythene bag.
